Moroccan roasted chicken

Ingredients;

2 chicken of 1.5 kg
6 cloves of garlic
1 preserved lemon
1 & 1/2 tsp of Smen
1 tsp of turmeric
1/2 tsp of saffron
1 tsp of pepper
1 tsp of ginger
1 tsbp of Rass el Hanout( three spices: cardamon,allspice,nutmeg)
1 & 1/2 tsp of salt
1/2 tsp of powder chilli
7 tsbp of olive oil

1 tsbp of brown sugar

1/2 tsp of chili powder
4 onions
300g green olives

2 stick of cinnamon

Preparation:

1. In a small bowl pour all spices with 2 tsbp of olive oil , preserved lemon , garlic and mix very well all ingredients

2. Coat the chicken with mixture of spices

3. Let chicken to rest for 12 hour or make it evening before

4. In saucepan pour chopped onions , stick of cinnamon let to cook for6 min before adding chicken

5. Add chicken and turn it after 3 min each side

6. Pour the chicken into filet side and let like this to cook for 45 min add water 1/2 L

7. Preheat oven at 200*, when chicken cooked and cool take it and pour it into dish-proof oven

8. Mix 1 tsp of Semen and 1 tsp of butter and coat chicken

9. Bring to a boil the broth of chicken and add green olives , add 1/2 tsp of chili powder and 1 tsbp of brown sugar , cook until get a thicken broth

10. Serve very hot
