Zaalouk Moroccan Eggplant Dip

Ingredients:

1 eggplant ( aubergine )

2 tsbp of coriander and parsley

1 tsbp of chopped garlic

4 tsbp of olive oil

1/2 tsp turmeric

1 tsp of cumin

1/2 paprika

1/4 of salt

1 tsbp of tomato concentrate

Preparation:

1. Cut the eggplant into small cubes

2. Preheat a pan frying and pour 2 tsbp of olive oil

3. Pour the eggplant into pan and mix , cook over medium heat for 10-15min

4. Add coriander & parsley, garlic, tomato concentrate and spices ,mix well

5. Pour remaining olive oil into mixture and using a frock press the eggplant until get an homogeneous Zaalouk.
